Ingredients:

  • 1 pound (16 oz) whole grain bowtie pasta
  • 1/2 to 1/3 cup pesto

  • A handful of spinach, washed and blanched
  • 1/3 cup cream cheese
  • 1/2 cup reserved pasta water

Instructions:

  1. Prepare the Bowtie Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the bowtie pasta according to the package instructions until al dente.
    • Before draining, reserve about 1/2 cup of pasta water. This will be used later to adjust the sauce consistency.
  2. Make the Pesto Cream Sauce:
    • In a bowl, mix together the pesto, cream cheese, and the reserved pasta water until well combined. Adjust the quantity of pasta water as needed to achieve a smooth and creamy consistency.
  3. Cook the Shrimp:
    • Season the peeled and deveined shrimp with paprika, seasoned salt, and Italian seasoning.
    • In a skillet over medium heat, cook the seasoned shrimp until they turn pink and curl up. This usually takes 2-3 minutes per side. Be careful not to overcook, as shrimp can become tough.
  4. Blanch the Spinach:
    • Add the spinach to the boiling pasta water for about 1-2 minutes, or until just wilted.
    • Remove the spinach and immediately plunge it into ice water to stop the cooking process. Drain and set aside.
  5. Combine Everything:
    • Drain the cooked pasta and add it to the skillet with the cooked shrimp.
    • Pour the pesto cream sauce over the pasta and shrimp. Toss everything together until the pasta is well coated with the sauce.
